Hachiyas should be left on the tree to ripen, develop sweetness, and soften. They can also be picked at full color and laid out in a single layer to ripen in a cool room. Or they can be kept refrigerated for up to 3 months, and then brought out to ripen individually. Mature at 14 to 20 ft. tall. Cold hardy zone 7.
